Coconut lemon snowball bites rolled in shredded coconut on a wooden board.

In our home, these have always been called Green Snowball Goodies. They were created by our friend Danielle Johnson, and they have been a holiday favorite ever since. Coconut, buttery macadamia nuts and a bright squeeze of lemon come together in a soft, no-bake bite, rolled in coconut until it looks like fresh snow.

They’re quick to make, which is exactly why we love them this time of year. Kids can help roll and coat every one, and a plate of them on the table feels festive without much fuss. Our kids go crazy over them.

These little bites are more nourishing than they look. Macadamia nuts are full of monounsaturated fats, the same heart-healthy kind found in olive oil, which help keep you satisfied between meals. Lemon adds a bright dose of vitamin C, and BALANCE brings nutrients for brain support, so a couple of snowballs make a snack that actually holds you over.

A scoop of LIVEDEN BALANCE™ is what turns them green, adding greens and plant protein to a treat with no added sugar that’s vegan, gluten-free and keto friendly. Make a batch for your family, then make another to share.

Instructions

  1. In a small bowl, stir together the BALANCE, water, lemon juice and lemon zest. Let it sit while you measure everything else.
  2. Add the coconut, macadamia nuts, coconut oil and vanilla to a food processor, then add the BALANCE mixture.
  3. Process for about 1 minute, until the mixture forms a thick paste.
  4. Roll into small balls and toss each one in extra coconut.
  5. Refrigerate for 1 hour, then enjoy.

Make it your way

Cashews work in place of the macadamia nuts, and lime makes a fun swap for the lemon. If your coconut oil is solid, warm it just until it softens. Keep the snowballs in a covered container in the refrigerator.

For little ones

Rolling the snowballs in coconut is the perfect job for little hands. Each bite holds only a small amount of BALANCE, so a couple make an easy snack. These do contain nuts, so check before sharing them with friends at school or a party.
